Chef Vee's Creamy Lobster Mac & Cheese: Seen on WBTV

A family favorite goes gourmet! Chef Vershawn Gray, contestant in the Carla Hall presents Favorite Chef competition, shares the new Creamy Lobster Mac & Cheese recipe she created to celebrate #NationalMacaroniCheese today on WBTV.

Ingredients:

1 qt of Heavy Cream

2 Packs of Double Smoked Cheddar Cheese or 14 oz Shredded

10 oz block Aged White Cheddar Cheese Shredded

8 oz block Extra Sharp Cheddar Cheese Shredded

Zest of 1 Lemon

2 tbls Old Bay Seasoning

1 ½ tsp Smoked Paprika

1 tsp Granulated Garlic

1 ½ tsp White Pepper

4- 3 to 4 oz Lobster Tails

16 oz Cavatappi Noodles

3 tbls butter

Chopped Fresh Parsley for Garnish

Method of Preparation

  1. Remove the shell off of 3 of the lobster tails. The other lobster tail slice down the center in half leaving the shell in tact.

  2. Roughly chop the 3 lobster tails and set aside.

  3. Boil Pasta as directions state on box. Drain and set aside.

  4. Warm your heavy cream and stove top and when it begins to softly come to a boil add your shredded Double Smoked Cheddar Cheese. Whisk until cheese is completely melted and you have a velvety consistency. Then remove from heat.

  5. Next add Old Bay, Smoked Paprika, Granulated Garlic, White Pepper, and Lemon zest. Stir until all seasonings are thoroughly incorporated. Next Salt & Pepper to taste. (I use course sea salt or Kosher salt)

  6. Pour noodles in a baking dish and top with the 3 chopped lobster tails and stir in the noodles.

  7. Next, pour your cheese sauce over your noodles and chopped lobster until your noodles are heavily covered in sauce.

  8. Next, top your mac in cheese with the white cheddar and extra sharp cheddar and bake 15 minutes or until golden brown on 375 degrees F.

  9. While your mac and cheese is in the oven. Melt 3 tbls of butter and take the sliced lobster tail and season with old bay and lay flesh side down in the pan and cook until internal temp of 145. I even add a little water and steam the tail and cover pan with a lid. Just want to make sure all sides of lobster or cooked.

  10. Once your mac and cheese is done spoon out on a plate and garnish with fresh cut parsley and top with the blackened lobster tails.
