Summer Salad to Beat The Heat

With much of South Carolina and North Carolina under a heat advisory, it's essential to stay hydrated and cool. One of the best ways to do this is by enjoying light, refreshing meals that won't weigh you down. Salads, rich in hydrating ingredients and packed with nutrients, are perfect for keeping the heat at bay while tantalizing your taste buds. Here are some vibrant and delicious summer salads that are perfect for those hot days.




Chef Vee's Grilled Chicken & Peach Salad was just featured on our Vmeals Meal Prep. It's perfect to make at home with a few fresh ingredients.


Ingredients

Baby Arugula

2 Peaches Sliced and Grilled (while grilling chicken)

Chicken Breast (Seasoned with/brown sugar, smoked paprika, chili powder, salt & pepper)

1 Red Onion sliced

Shaved Almonds

Smoked Feta Cheese

Served with a Lemon Vinaigrette






Watermelon and Feta Salad

Ingredients:

  • Watermelon cubes

  • Crumbled feta cheese

  • Fresh mint leaves

  • Red onion, thinly sliced

  • Balsamic glaze

  • Olive oil

  • Salt and pepper

Instructions:

  1. Combine watermelon cubes, crumbled feta, and red onion in a large bowl.

  2. Drizzle with olive oil and balsamic glaze.

  3. Season with salt and pepper to taste.

  4. Garnish with fresh mint leaves and serve chilled.





Classic Caprese Salad

Ingredients:

  • Fresh tomatoes, sliced

  • Fresh mozzarella, sliced

  • Fresh basil leaves

  • Balsamic vinegar

  • Olive oil

  • Salt and pepper

Instructions:

  1. Arrange tomato and mozzarella slices alternately on a plate.

  2. Tuck basil leaves between the slices.

  3. Drizzle with olive oil and balsamic vinegar.

  4. Season with salt and pepper to taste.





Quinoa and Avocado Salad

Ingredients:

  • Cooked quinoa

  • Avocado, diced

  • Cherry tomatoes, halved

  • Cucumber, diced

  • Red bell pepper, diced

  • Red onion, finely chopped

  • Fresh cilantro, chopped

  • Lime juice

  • Olive oil

  • Salt and pepper

Instructions:

  1. In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, cucumber, bell pepper, and red onion.

  2. Drizzle with lime juice and olive oil.

  3. Season with salt and pepper to taste.

  4. Garnish with fresh cilantro.





Strawberry Spinach Salad

Ingredients:

  • Fresh spinach leaves

  • Sliced strawberries

  • Crumbled goat cheese

  • Sliced almonds

  • Red onion, thinly sliced

  • Poppy seed dressing

Instructions:

  1. In a large bowl, toss together spinach, strawberries, goat cheese, and red onion.

  2. Sprinkle with sliced almonds.

  3. Drizzle with poppy seed dressing and toss to combine.




Greek Salad

Ingredients:

  • Cucumber, diced

  • Cherry tomatoes, halved

  • Kalamata olives

  • Red onion, thinly sliced

  • Feta cheese, crumbled

  • Green bell pepper, diced

  • Fresh oregano

  • Olive oil

  • Red wine vinegar

  • Salt and pepper

Instructions:

  1. Combine cucumber, tomatoes, olives, red onion, bell pepper, and feta cheese in a bowl.

  2. Sprinkle with fresh oregano.

  3. Drizzle with olive oil and red wine vinegar.

  4. Season with salt and pepper to taste.
